Score the skin and leave the fish on the tray to get room temp. Season it with sea salt & rapeseed oil (Sicilian lemon). Heat the non-stick pan and fry the fish skin side down until skin is golden brown then sear the other sides of the fish only for a few seconds.

Put the fish on the tray skin side up, put garlic butter on top of it, and put it into the oven for about 3-5mins.

Take the fish out and squeeze some lemon juice on top of the fish. Best served with lemon & garlic butter sauce or creamy white wine & dill sauce.
