It’s been a toil of a month here at the Farm and we may well be reaching for the gin this weekend! However, all the hard work that the team puts in, including producing mountainous amounts of paperwork, to keep everything we do compliant and up to standard has been recognised as we have passed 3 sets of inspections during January.
Week 2: Salsa Inspection. Nothing to do with dancing or dips! This is serious stuff – Safe and Local Supplier Approval – which helps local and regional food producers supply products to national and regional buyers.
Week 3: Trading Standards inspection.
Week 4: Soil Association. This charity literally digs deeper to transform the way we eat, farm and care for our natural world. Definitely values we hold dear.
These approvals and accreditations are vital to our business. After a brief pause we’ll be focusing on developing our rural businesses further in 2022.
‘We believe that here at Wharfe Valley, we are special because we are a small community-minded family business – we know each and every farmer who grows their seed for us, not because we met them in some meeting or other, but because we grew up with them.
They have been friends for over 60 years, and we work together. We give them the best price we can, not because that is what they ask, but because that is what we want to do.

Ok, so they may not be the perfect looking, but Erika’s Yorkshire Puddings performed well when made for dinner one night, after she worked with Stephanie Moon (Chef Consultant) on a video shoot for Wharfe Valley, as part of our Celebrity Chef Challenge event.
Steph made some fabulous puddings – all using the same, simple recipe….
Step 1 – Take a container (cup, mug, jar etc). Erika took a bowl 8cm tall by 7cm wide
Step 2 – Fill (right to the top) with flour – empty into a mixing bowl
Step 3 – In the same container, fill (right to the top) with milk – empty into the mixing bowl
Step 4 – In the same container, fill (right to the top) with eggs – no matter how many eggs – fill the whole container – empty into the mixing bowl
Step 5 – Put the pudding tray into the oven onto 180 degrees, and leave to heat
Step 6 – Whisk all mixture together very well
Step 7 – Strain the liquid mixture into another bowl and leave to stand
Step 8 – Pour Wharfe Valley Extra Virgin Cold Pressed Rapeseed Oil (Original, or any of the infused flavours – Garlic & Rosemary, Black Pepper, Smoked, Chilli, Lemon)
Step 9 – Empty the mixture into the hot pudding trays
Step 10 – Leave for 25 minutes and take tray from oven
Step 11 – Take puddings from the hot pudding tray and serve! Yum.
Erika said, “Steph’s recipe seemed so simple, and totally different from what I had followed before. Served with a hearty stew the puddings might not be the best looking – but they tasted great!”.

Chris and Rose Bax (the co- owners of the brand) have created a great tasting alcohol-free drink, using their experience and knowledge of creating recipes with plant flavours and other ingredients to inspire alcohol-free ‘spirits’.

Bax Botanics currently offer two products – Verbena and Sea Buckthorn. We’re always looking for ways to show our appreciation to our customers, and Sallyann and Geoff were delighted to support one of our key customers – Wellocks Distributors, at their 60th Diamond Anniversary Event late last month.
Wellocks held a mini exhibition at the Lancashire Country Cricket Club, Old Trafford, and invited suppliers from across the country, to showcase their products and enjoy the festivities, which included a networking evening, with presentations from William Jackson Food Group CEO/Chairman, Jill Martin (Wellocks MD), Simon Stenning, (Foodservice strategy Advisor and Futurist), as well as Chef Demonstrations and media presentations.
Sallyann said ‘It was a fabulous couple of days, meeting with the Wellocks team, other suppliers and hearing what industry specialists had to say about the foodservice industry at this time’
A new and exciting addition to the Christmas festivities launched in York earlier this month, with suppliers of local Yorkshire products invited to showcase their Christmas offerings.
‘The Winter Village’ at York Minster on Deansgate, opened on Wednesday 17th November, with an official ceremony – headed by Canon Michael, who lead with prayers, followed by music from a local quartet.
Visitors are welcomed to start their Christmas shopping at the newly erected Winter Village, which also hosts food and drink specialities and gifts from local culinary suppliers.
With traditional wooden cabins, heated and covered tables offering food, drinks and the perfect place to admire the majestic York Minster.

It’s time to start thinking of Christmas – yes it really is!
Sallyann give us her latest update on goings on down at the farm:
“So this weekend we have decorated the Wharfe Valley Stoves Showroom. We have been really fortunate to have an award-winning visual display expert amongst our friends, who has kindly volunteered to add a bit of sparkle to the place. Well actually he took one look at our efforts, despaired and decided he needed to take it in hand!! We are really chuffed with the results. His contact details are available if anyone wants their house/showroom to have a touch of wonder this year!
The oil side is speeding up with new flavours in the mix and the Christmas gift packs ready to start flowing out of the door. More on this on our Social Media soon.
So far we have not had any problems with delivery, although our couriers are starting to mutter about delays in the future. All the crops are in the ground now, ready to see what the weather is going to throw at us this coming year. Some of them have even poked their first shoots out of the ground! Prices are a nightmare and with fertiliser in very short supply it is going to be difficult to work out the financial requirements for the next year.
Contract Bottling is busy with Christmas orders from our Cocktail Man stacking up ready to be sent out. There are so many lovely choices it is difficult to know which one to choose. Although at the moment I am rather stuck on the porn star martini……”
Wharfe Valley Farms is helping to promote ‘life in the real world’ for teenagers with complex learning and physical difficulties.
Helping the community has always been very important to the Kilby family. When we were approached by James Paylor, Teacher of 14-19 year olds, at West Specialist Inclusive Learning Centre Powerhouse in Leeds, we immediately offered support.
As Sallyann says:
“When we were asked for our help, of course we said yes. The work that James and his colleagues do at WSILC is so important in today’s society, and helping youngsters with complex learning and physical difficulties face everyday challenges is paramount in developing these young individuals lives’.
Wharfe Valley offered James a range of coloured bottles (to represent our actual oils range), making selection easier, more colourful, and to give more choice. We also donated jars of Dressings and Mayos so that the youngsters had differing shapes of products to work with – all adding to the creation of a realistic experience of shopping in real everyday life.
West SILC is a regional centre of excellence for the MOVE programme, which supports young people with physical disabilities to develop functional skills for everyday life.
It only took a few days; the right product; and the right occasion for North Street Deli in Wetherby to try a new product in their busy kitchen – Extra Virgin Cold Pressed Rapeseed Oil from Wharfe Valley Farms just a few miles down the road.
When we called in to meet owners, Diane Knowles and Alan Heeley, and presented our Original Rapeseed Oil, and Infused flavoured oils, we were greeted with great interest in our products, and a keen eye to spot the potential for adding something special to their dishes.
With over 10 years running the Deli, Diane and Alan (who are both trained chefs), have a loyal and supportive customer base both for the Deli Café offering, but also a growing Contract Catering and Speciality Dinners audience.
Eager to try one of our infused oils – Chilli – Diane prepared their traditional hummus with ciabatta bread and spicy tortilla chips for a current customer who wanted some nibbles for a midnight feast after the races with friends – this time Diane added our Chilli oil to the hummus ‘for extra depth’.
The feedback was overwhelmingly ‘thumbs up’ – ‘we’ll have that one again’
With current issues in the transport and haulage industry taking their toll on retail, hospitality and ‘everyday goods right across the country’, it’s good to know that this local food producer is keeping our deliveries ‘right on track’.

Our products are grown, harvested and produced right here on the family farm, so producing and managing stock enables us to maintain stock levels and deliveries for our customers”.

It’s time to prepare the batter for the best ever Yorkshire Puddings. Use our Wharfe Valley Farms rapeseed oil in each compartment in the tin – you need a red hot cooking temperature and our Wharfe Valley rapeseed oils are a great way to achieve this without burning! You can ramp up the heat to 230oC and get light, fluffy middles with crunchy outers!
Using our Wharfe Valley cold pressed rapeseed oil means the batter can be heated to the highest temperature and you will have puddings touching the top of your oven if you follow this well tested Wharfe Valley recipe:
4 large eggs
250g plain flour
1 tablespoon salt
1/2 tablespoon of pepper
Rapeseed oil – try an infused flavour : garlic, chilli and smoked!
Recipe (makes 12):
Heat over to highest temperature (upto 230oC) and place shelf in the middle.
Blend all ingredients until smooth.
Stand batter for 30 minutes at room temperature.
Heat batter and bake for 28 minutes.
DO NOT OPEN THE OVEN DOOR until time has elapsed.
Allow to cool in a large plastic or wood bowl.
Serve with delicious Yorkshire gravy.
TIP – We love them as a dessert with our raspberry vinegar and a big scoop of ice-cream. Delicious!

We would like to share a vegan mayonnaise recipe we have been sent by a Wharfe Valley rapeseed oil fan – thank you Holly Heyes from West Yorkshire.
Our award winning Wharfe Valley red chilli rapeseed oil was used to add some fire to this vegan mayonnaise however you can also use the original flavour, both available in 250ml or 500ml, from our online shop:
Enjoy our recipe!
3 x tbsp water
1 x tsp apple cider vinegar
1 x tsp maple syrup
1 x tsp Dijon mustard
½ x tsp salt
200ml cold pressed chilli rapeseed oil
onnaise (with Sweet Chilli option):
Place the water, cider vinegar, maple syrup, Dijon mustard and salt in a jug. Using a stick blender, whizz the ingredients until fully combined.
Add 2 x tablespoons of rapeseed oil to the mixture and pulse with a stick blender until the oil is combined. Add another 2 tablespoons of oil and pulse for a few seconds until all combined. Repeat this process, slowly adding 2 tablespoons of rapeseed oil each time, until all the oil is added and the mayonnaise is creamy.
Transfer the mayonnaise to a clean jar with a lid and use, whilst keeping refrigerated for up to 2 weeks.
Dip or add to a salad bowl for a delicious vegan treat!

Wharfe Valley have partnered up with a local hand sanitiser station producer to supply our customers with a robust and durable, portable and easy to assemble, station to dispense hand sanitiser safely.
In April 2020 Wharfe Valley added a range of high quality, 80% ethanol hand sanitiser to our product portfolio in a 1L bottle and a 5L container. This was well received by our customers and so we then introduced a spray lid and an automated, battery operated dispenser to the range. Since then we have seen growing demand for our products as the threat of Covid-19 still exists, especially since the hospitality sector re-opened.
The portable sanitiser station was an obvious addition to the new hand hygiene range as it means that customers and staff have easy access to a well positioned, durable and robust station.
As a food producer we understand that hand hygiene has never been as important. We tried the sanitiser station out onsite for ourselves and the staff found it to be an ideal solution to wash hands and keep everyone safe.
It is used along with the dispensers which are battery or mains operated and are suspended securely from the station. Local retailers already have this in operation and feedback has been really positive from them and their customers.
